Today is National Taco Day, and the perfect excuse to eat tacos for breakfast, lunch and dinner.

Who doesn’t love this cumin-and-chili-infused, traditional Mexican favorite? Tacos are easy to throw together and so customizable. Plus, they can satisfy the the biggest appetite.

Tacos are traditionally associated with fresh tortillas, ground beef, cheese and sour cream. Here in the U.S., taco dishes are as varied as life itself — from taco dip to pizza tacos to dessert tacos. Tacos are rich in protein, fiber, calcium, iron and magnesium; however, depending on how you make them, tacos can be heavy on fat and cholesterol.

Make your tacos healthier with the ten tips below. We also share some delicious taco recipes that incorporate some of our products.

10 ways to “taco” healthier:

  1. Substitute chicken, fish or turkey for ground beef
  2. Skip the meat altogether and use vegetables, like roasted cauliflower and beans
  3. Choose kale or dark, leafy greens instead of iceberg lettuce
  4. Replace sour cream with guacamole, yogurt, or a low-fat sour cream
  5. Load up on the tomatoes, slow down on the cheese
  6. Use quinoa instead of rice
  7. Use lettuce or bell pepper boats as tortilla substitutes
  8. Choose soft corn tortillas instead of baked
  9. Make your own sauce or salsa and control the sodium
  10. Make your own taco seasoning, or simply use lemon, lime and garlic. Store bought seasonings can contain too much sodium.

TACO MEATLOAF

This recipe uses our micro-sliced Mila® — a super food that is gluten-free, trans-fat free, sugar-free, and is a superior plant-based source of protein and fiber. Mila uses different varieties of the chia seed to provide a wide array of nutrients. By combining these crops, you get a nutritionally robust product.

Ingredients:

  • 2 1/2 pounds ground beef
  • 1/3 cup micro-sliced Mila
  • 1/4 cup taco seasoning
  • 1 tablespoon chili powder (optional)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 large eggs
  • 6 ounces grated cheddar cheese, divided
  • 1/4 cup water

Instructions:

  1. Preheat oven to 350F and line a large rimmed baking sheet with tinfoil.
  2. In a large bowl, combine ground beef, micro-sliced Mila, taco seasoning, chili powder (optional), salt, pepper, eggs, 4 ounces of the cheese, and water. Mix with your hands to combine well.
  3. Shape mixture into a long, low loaf. Sprinkle top with remaining 2 ounces grated cheese. Bake 50 to 60 minutes, or until a thermometer inserted in the center reads 135F for medium.
  4. Remove and cut into slices. Top with your favorite taco toppings such as sour cream, chopped tomatoes, and avocado.

TACO SAUCE with GOJI

Goji superfruit is a dark, delicious juice with a tinge of sweetness. As a natural source of vitamin C and polysaccharides, Goji provides nutrition to help support healthy functions of the immune system. Goji is also is a source of carotenoids, including lutein and zeaxanthin, which can help enhance eye.

  • 1 can tomato sauce
  • 2/3 cup water
  • 3 tablespoon Goji
  • 1 tablespoon ground cumin
  • 2 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon garlic salt
  • ½ teaspoon chili powder
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper

Instructions:

Stir tomato sauce, water, Goji, cumin, onion powder, garlic powder, garlic salt, chili powder, paprika, sugar, and cayenne pepper together in a saucepan over low heat; cook at a simmer until slightly thickened, about 20 minutes. Cool sauce slightly before serving.

A: The most recent labels of our Acai, Fusion, and Goji superfruit juices have this information. You can check our web site for their full nutritional content. For your convenience, we provide the following: Acai – Total Carbohydrates 1g, Sugars 1g; Fusion – Total Carbohydrates 3g, Sugars 2g; Goji – Total Carbohydrates 4g, Sugars 4g. These data for Goji were calculated based on theoretical input. After analytical testing of the finished product, the label will be updated to 3g Total Carbohydrates and 2g of Sugars. We are also currently updating our Noni and Mangosteen superfruit juices and the following has been printed on the newest product labels: Mangosteen – Total Carbohydrate 2g, Sugars 1.5g, Noni – Total Carbohydrates 1.5g, Sugars 0.5g. Keep in mind that one serving of the superfruit juices is 1 ounce or 30 mL, which is 1/8th of 1 cup.

Q: In the Coral Calcium supplement, is is calcium citrate or calcium carbonate?

A: Our calcium product is coral calcium which is harvested from fossilized coral beds or above-sea mines (no living reefs are disturbed by the process). Coral calcium contains essential trace minerals, including magnesium. Coral calcium is a form of calcium carbonate which is found in many organic sources such as bone meal, shells and dolomite. Calcium citrate is the naturally occurring calcium salt of citric acid. It is the product of the fermentation process used to produce citric acid.

Q: Do you have NDC or UPC numbers for your products?

Q: Can you help explain why we have goji juice and wheat grass in our product line? A: Simple sugars as well as the vitamins and minerals in wheat grass can be absorbed by the body and is a natural source of vitamins A, E, C, K and B6 as well as calcium, magnesium, selenium and iron. The fiber is not fully digestible, but this is true of most fruits and vegetables. Goji, known as the “happy berry,” may promote feelings of well-being. It has high nutrient content, carotenoids, essential fatty acids and powerful antioxidant properties. It also is a source of vitamin C and polysaccharides to support healthy functions of the immune system.

Q: My mother in law is doing Rally28. She has high blood pressure. Is there anything she should stray from? She is also constipated. A: We recommend your mother-in-law consult her physician before starting any weight-loss program. Additionally, the recommended use for Metabolic ONE states: Do not take this product if you have heart disease, high blood pressure, or are taking any prescription medication, especially monoamine oxidase inhibitors (MAOIs). The constipation could be caused by her body adapting to the added amount of fiber she is getting from the program. One serving of 360 Complete Shake provides 11g of fiber. If she is using two shakes a day, she is getting 22g of fiber, which is 88% the DV for fiber. Most people do not consume enough fiber in their diet, so when they add more, constipation can occur. It is important to drink sufficient water to help move fiber through the digestive tract. She may want to reduce the amount of shake she is using and give her body time to adapt to the added amount of daily fiber. Another issue may be what we call transitory adaptation. As an individual makes significant changes to their diet, some people need time to adapt to these changes. Some people may experience some GI disturbances as a result of the changes until the body learns to adapt.  Generally, like increased fiber intake, we recommend cutting back amounts used and then increasing them back to normal dosages as tolerated. However, in the case of your mother-in-law, we highly recommend she consults with her physician before using the Genesis PURE supplement products.

Q: What metals does C’ENCIA pull out of the skin? A: C’ENCIA is intended to intensely moisturize the skin and nourish the skin with beneficial ingredients to help minimize the appearance of fine lines and wrinkles. Products intended to pull impurities out of the skin are usually face masks and unfortunately C’ENCIA does not have this effect.  If Genesis PURE had a face mask product, it would not be capable of pulling out “metals” from the skin.  This is a common misconception sometimes touted by other companies.  A face mask can draw out of the skin dirt, sebum, dead skins cells and other accumulated particulates like cigarette smoke, pollution fumes, and pollen.  Unfortunately, C’ENCIA does not have the capability to pull impurities or metals out of the skin.

Sweet and spicy Goji soup

IMG_5534 Genesis PURE’s dark and delicious Goji juice adds a tinge of sweetness to this mouth-watering soup. You can also benefit from the berry’s protective phytonutrients for general health and well-being.

The goji berry has been historically called the “happy berry” for the sense of well-being one feels after consumption.

As a natural source of vitamin C and polysaccharides, Goji provides nutrition to help support healthy functions of the immune system. It is also a source of carotenoids, including lutein and zeaxanthin, which may help support eye health.* Reports have also shown that goji contains high levels of antioxidants, important for protecting the body from free radicals.
Ingredients:
  • 1 cup of Genesis PURE Goji juice
  • 230g (1 cup) chopped tomatoes
  • 450ml (3/4 pint) vegetable stock (more if needed)
  • 1 large onion, diced
  • 1 T. olive oil
  • 1 small chili, chopped finely OR 2 tsp. chili powder
  • 1 tsp. cumin seeds
  • 2 T. ground coriander

Directions:

  1. Heat the olive oil in a medium saucepan and saute the onion and chili for a couple of minutes before adding the tomatoes, goji juice and cumin.  Stir for another few minutes.
  2. Add the vegetable stock, bring to a boil and reduce to a simmer for 10 minutes.
  3. Stir in the coriander. You can enjoy the soup as is, or if you wish, blend the soup until smooth.
  4. Decorate with a few fresh coriander leaves, cumin seeds and black pepper. (Optional: swirl in a teaspoon of yogurt)
